The raw material is 100% Delaware, all produced in Nanyo City, Yamagata Prefecture. The Delaware was fermented in three different ways. One was destemmed and fermented with the skins for 4 days. Another was fermented whole cluster with the skins for 8 days (both using stainless steel tanks). And the last was fermented whole cluster in an amphora with the skins for 9 days. These three were blended in March 2021. It is an orange wine with a good balance of fermentation, umami, astringency, and fruitiness.
