
Grape Republic / Rosso 2021 (Red)
Regular Price ¥2,970100% Yamagata Prefecture grapes are used. Stuben, Delaware, and Cabernet Sauvignon were fermented using various brewing methods and blended in the summer of 2022. The aging period is 9 to 10 months. The ratio of amphora aging to stainless steel tank aging is approximately half and half. All fermentation is done with wild yeast. No fining or filtration. No preservatives or other additives are used.
A sweet aroma reminiscent of strawberry syrup is mixed with the scents of black berries and spices. The taste features the juicy fruitiness and acidity of Steuben and Delaware grapes, along with a moderate tannin and spiciness derived from Cabernet Sauvignon, creating a well-balanced profile. Overall, it is a fresh and refreshing light red (Rosso) wine.
