Made from 100% Delaware grapes cultivated without pesticides (no Bordeaux mixture or sulfur compounds) in the Kanayama vineyard in Nanyo City, known for its thick grape skins.
This Delaware was grown in spring with vinyl covering to allow ample wind from Nanyo City. Crushed grapes and whole clusters were alternately stacked in the tank, sealed tightly with vinyl on top, and underwent 40 days of carbonic maceration (MC). It was naturally fermented without any intervention, then pressed, and after the final fermentation, underwent secondary fermentation in the bottle.
With an alcohol content of 12%, you can enjoy a satisfying "lightly sparkling wine" with a bubbly sensation bursting with the bitter citrus notes.
