Made from Merlot grapes from the Okitama region of Yamagata Prefecture. To reduce the intensity reminiscent of the hot summer of 2023, the destemmed and crushed grapes were fermented at low temperature for 60 days, with minimal stirring, using the cap to block air inside the tank in this MC wine method. This creates more body in the wine compared to the usual sealed MC method, and also brings out "aroma" and "gentleness" beyond typical fermentation. We wanted to express a smooth, easy-drinking wine from the hot 2023 Yamagata Merlot, so we used this method. You may notice a slight "pyrazine (green aroma)," but the smooth, juicy character dominates, making it a versatile wine for various occasions. Full malolactic fermentation (MLF) has been completed, so you can enjoy a more complex and pleasant finish. Although production is limited, please enjoy this "plain Merlot," like "plain udon" or "plain soba."
