Regular price ¥4,180An anaguma made from sandy Sangiovese.
We aimed to create a dense liquid packed with a gentle mouthfeel and rich umami.
In 2024, freshly harvested, still warm grapes were lightly crushed, and naturally cultured yeast was immediately added to start fermentation.
And it was pressed just 3 days after crushing.
Although the period is short like when making rosé wine, highly active yeast is added to the warm must, allowing moderate extraction and resulting in a light red wine.
The appearance is a vivid ruby color, with the elegant aroma and aftertaste of sour cherries.
Finished with a gentle flavor that goes down smoothly as usual.
