Regular price ¥3,850This wine is crafted by young winemaker Ryusei Kusano, who aims to create a deeply flavorful wine that unfolds gradually on the palate rather than a straightforward, sharp taste.
In 2023, I made this with my favorite blend and co-fermentation method. The grapes are Merlot and Tannat from Hokuto City, Yamanashi Prefecture, and Kerner from Yoichi, Hokkaido.
Destemmed and crushed Merlot and Tannat were combined with pressed Kerner juice, then pressed after a shallow 10-day skin contact. The wine was aged for 8 months in old barrels. Natural yeast, unfiltered, with no added sulfur dioxide at both fermentation and bottling.
Layers of grapefruit and muscat from the Kerner, bonito broth notes from the Tannat, and the refreshing fruitiness of Merlot unfold richly.
The name kisui (きすい) comes from brackish water in estuaries. It refers to the narrow area where freshwater and seawater mix between rivers and the sea.
By blending and co-fermenting the grapes, the distinct characteristics of each variety become subtle, creating a wine that gently delights the palate and makes you want to take another sip.
