All grapes used are from Kaminoyama City, Yamagata Prefecture.
All Cabernet Sauvignon grapes were fully destemmed and divided into two containers: a fiber tank and an amphora, undergoing 20 days of skin fermentation. After pressing, the wine fermented in the fiber tank was aged in stainless steel tanks for about 9 months, while the wine fermented in the amphora was aged in the amphora as is. In the summer of 2022, the wines from the two tanks were blended and bottled. All fermentation was spontaneous using wild yeast. No fining, filtration, antioxidants, or other additives were used.
