Chardonnay from Yamagata Prefecture is whole-cluster pressed, then divided between amphora and barrels for fermentation. 60% is aged in amphora, 40% in barrels. All fermentation is spontaneous using wild yeast. No fining, no filtration, and no additives such as preservatives are used.
The aroma is based on ripe, fresh fruits like apple and melon, with nuances of acacia honey and custard mixed in. The taste is as fresh as the aroma. The acidity is mild and smooth, with a dry and bitter finish.
