100% of the grapes used are from our own farm in Nanyo City, Yamagata Prefecture. The grapes are organically grown without the use of pesticides other than Bordeaux mixture, and without fertilizers or compost.
Two amphorae are used: one for co-fermenting Shine Muscat, Niagara, Albariño, and Delaware, with 9 days of skin fermentation in the amphora, followed by aging in the amphora. The other one ferments and ages Delaware after 24 hours of skin contact in the amphora. After approximately 7 months of aging, it is bottled.
Fermentation is done with wild yeast, and it is unclarified, unfiltered, and contains no added preservatives.
