100% of the grapes used are from our own farm in Nanyo City, Yamagata Prefecture. The grapes are grown organically without any pesticides other than Bordeaux mixture, and without fertilizer or compost.
Using two amphorae, one is a blend of Shine Muscat, Niagara, Albariño, and Delaware, with 9 days of skin fermentation and aging in the amphora. The other is Delaware, fermented and aged in the amphora after 24 hours of skin contact. Bottled after about 7 months of aging.
Fermented with wild yeast, unclarified, unfiltered, and no added antioxidants.
