Made with 100% grapes from our own vineyard in Nanyo City, Yamagata Prefecture. The grapes are grown organically without any pesticides except Bordeaux mixture, and without fertilizers or compost.
Using two amphorae: one blends Shine Muscat, Niagara, Albariño, and Delaware grapes, undergoes 9 days of skin fermentation in the amphora, and is then aged in the amphora. The other uses Delaware grapes, which undergo 24 hours of skin contact before fermentation and aging in the amphora. After about 7 months of aging, the wine is bottled.
Fermented with wild yeast, unclarified, unfiltered, and contains no added preservatives.
