Using grapes from Yamagata Prefecture and a small amount from Iwate Prefecture. Steuben grapes from Yamagata are fermented with skins for 7 days after destemming. Delaware grapes are also fermented with skins for 8 days after destemming. Steuben and Neo Muscat are direct-pressed and fermented in amphorae, while Yama Sauvignon from Iwate is fermented with skins for 9 days (15% whole clusters). After all fermentations are complete, the wines are blended and aged in stainless steel tanks. A fruity, light-bodied, easy-drinking wine.
