Regular price ¥3,850This special Pinot Noir is named after Chie Sakata, the head winemaker at Bernhard Koch. When we visited the winery in March 2023, the 100% barrel-aged Pinot Noir we tasted was so outstanding that it was decided to bottle it exclusively for the Japanese market.
Not only did we taste locally, but we also asked Mr. Sakata to prepare multiple samples with adjusted new barrel ratios and flavors. After repeated tastings, we finally bottled the cuvée that we could confidently say, "This is it!" Compared to the standard "Von Less (KA-610)," it offers rich fruit flavors along with complexity and a pleasant oak aroma.
Grapes are sourced from vineyards in the three villages of Heinfeld, Fremlingen, and Godramstein. The soil consists of variegated sandstone and limestone. The vines are trained in cordon with a planting density of 5,000 vines/ha and a yield of 45 hL/ha. Harvesting is done by hand, selecting grapes in the vineyard.
The grapes, 100% destemmed, undergo cold maceration at 6°C for 4 days before alcoholic fermentation. Then, fermentation is carried out in stainless steel tanks with temperature controlled at an average of 28°C. Aging is done for about 18 months in French oak barrels (5% new barrels). No fining or filtration is performed. Compared to "Von Less," it offers rich fruit flavors along with complexity and a pleasant oak aroma.
