Hand-picked and immediately destemmed after harvest, followed by natural fermentation. Maceration for 14 days before pressing. Delaware grapes of different ripeness, both fully ripe and just before full ripeness, are used. Aged for 2 months, with 2 rackings, bottled without fining, filtration, or added SO2.
