Since 2006, part of the estate vineyard in the Tazawa area of Tōmi City, where Villadest Winery is located, has been growing grapes without synthetic pesticides. The Merlot harvested from that vineyard is fermented with natural yeast native to the grapes and bottled unfiltered. It is a "natural" style red wine with reduced use of preservatives.
This wine has a "gentle" personality and charm, different in character from the orthodox Vignerons Reserve.
Barrel aged for about one and a half years.
