The grapes of Kitaten no Shizuku are easily influenced by the environment of the fields and require the most careful management in our own vineyards. If we do not shape the flower clusters immediately after flowering, pollination will not occur successfully. Even if pollination does not happen, it will result in small seedless grapes known as "milrantage." These small fruits are very high in acidity and sweetness, making them delicious, but they are also prone to splitting when it rains.
During the ripening period, the skin becomes translucent and the seeds become visible, and harvesting is done in time with the beginning of the decrease in acidity.
This wine is characterized by a vibrant aroma reminiscent of refreshing green apples and honey, along with a rich and deep fruitiness.
