The volume derived from acidity, bitterness, and alcohol enhances the sweetness and umami of ingredients, creating a richness that gives the flavor spatial and temporal depth.
The label features "Yoi" by Juri Ando. The title "Tokiwani Moeru" is quoted from the "Kakinomoto Collection," Volume 234 of the Gunsho Ruiju, by the poet Kakinomoto no Hitomaro from the Asuka to Nara periods: "Because of the endless thoughts of Fuji's roots, my body has become eternally burning." This waka poem is considered the oldest poem describing Mount Fuji's volcanic activity.
This Koshu wine, made using traditional methods, is designed with the hope that it will become like Mount Fuji—praised as a "subject of faith and a source of art"—changing its appearance depending on the era and the viewer due to its uniqueness and multifaceted nature.
