This wine uses Delaware grapes cultivated with grass cover and reduced pesticides by Mr. Onishi, who trained at Katashimo Winery during the same period, grown in Kashiwara City, Osaka Prefecture.
Long fermentation at low temperature in stainless steel for about three months. Lactic fermentation.
The flavor profile is similar to the "u" wine released in 2021, smooth yet rich, with aromas of citrus, pear, and a lactic fermentation scent reminiscent of Chelsea yogurt, pairing well with fatty meats. The volume is slightly smaller than "u."
Although the grapes are from hot Osaka, they are grown in a slightly elevated mountainous area, which preserves a good level of acidity and creates a well-balanced wine.
