The personality of the grapes is characterized by their fragrant brilliance and acidity. They are originally a variety known for their vibrant aroma, but I feel that the Campbell grapes from Takehara are even more splendid compared to those from other regions. The reason for this might be that "the seawater seeps into the ground, creating a stressful growing environment, which causes the grapes themselves to try to strengthen their vitality." This is what the local growers say.
The cultivation area is not in the mountainous region, so there is not much temperature difference between morning and evening. Nevertheless, the acidity stands out. This is due to the inherent characteristics of the variety, as well as the careful timing of the harvest. Through secondary fermentation in the bottle, we maximized the distinctive aromas of this sparkling wine, which has a stronger pressure.
