The grape's character lies in its vibrant aroma and acidity. Although this variety is naturally aromatic, the Campbell grapes from Takehara feel even more vibrant compared to those from other regions. The reason, according to local growers, is that "because seawater seeps into the soil, creating a stressful growing environment, the grapes themselves try to strengthen their vitality."
Since the cultivation area is not in a mountainous region, there isn't a significant temperature difference between morning and evening. Despite this, the acidity stands out. This is due to the inherent character of the grape variety as well as the timing of the harvest. The secondary fermentation in the bottle enhances the distinctive aroma of this sparkling wine, which has a slightly higher pressure.
