An amber wine mainly made from Shine Muscat, added to the lineup since last year.
Two aromatic varieties are used. Shine Muscat undergoes fermentation with lightly crushed whole clusters, then another layer of whole clusters is added for a slow maceration fermentation lasting about two weeks. Since Shine Muscat is hard to crush, the grapes were manually crushed and blended into the must instead of punch-downs.
Although it is grown with seeds, many seedless berries appear as a mutation, so it is made with whole clusters. By pressing strongly, the aim is to give the wine a gentle astringency and bitterness.
Although it belongs to the category of orange wine or amber wine, its color is pale and close to yellow.
Chachapeal is a coined term combining "Chacha," meaning whole-cluster must in Georgia, and "Peal," meaning pale.
