Made by fermenting whole-cluster Delaware grapes from our own vineyard using maceration (MC) to extract the grape's umami, then aged in barrels (some large barrels). The extraction of tannins from the skins results in an orange wine rather than a white wine.
The Japanese tit, often seen around wineries and vineyards, was chosen for its charming tie-like pattern and approachable image. This is a wine meant to be enjoyed casually in everyday life.
A shining orange-tinged amber. Aromas of quince, plum, apricot, Darjeeling, and roasted nuts. Gradually, sweet aromas of honey and osmanthus spread. The palate is mellow, with a beautiful, expansive acidity characteristic of Yamagata, alongside the rich fruitiness and umami of ripe Delaware grapes. Moderate tannins from fermentation tighten the flavor. Enjoy it not too chilled, preferably in a large glass, to savor the umami that unfolds with temperature changes. It pairs well with rich, fatty meat dishes that white wine alone might not complement.
The current label was designed by local artist Mari Yoshida. It’s not just cute; the label captures the dynamic vitality of living creatures.
