Using grapes from Yamagata Prefecture and a small amount from Iwate Prefecture. Steuben from Yamagata Prefecture is fermented with skins for 7 days after destemming. Delaware is also fermented with skins for 8 days after destemming. Steuben and Neo Muscat are direct pressed and fermented in amphorae, and Yama Sauvignon from Iwate Prefecture is fermented with skins for 9 days (15% whole clusters). After all fermentations are complete, the wines are blended and aged in stainless steel tanks. A fruity and light-bodied easy-drinking wine.
