Using Steuben, which was fermented with the skins for 6 days, as the base, we blended it with Muscat Bailey A and Merlot, and added Niagara, Delaware, and Neo Muscat that underwent 12 hours of skin contact. Before bottling, we returned Delaware juice to adjust the sugar content and allowed for a second fermentation in the bottle.
This is a rosé sparkling wine characterized by a refreshing acidity and a hint of tannin.
