It features a sweet and sour sensation of well-ripened red berries (strawberry, cranberry), harmonized mainly with various black fruits like blueberry, cassis, and blackberry, along with fallen leaves from broadleaf forests after the rain, sweet spices such as nutmeg, vanilla, cinnamon, and a hint of black pepper. When swirling, you can sense violet flowers, black chocolate, mocha, and roasted coffee aromas, along with notes of tanned leather, cedarwood, green herbs, iodine, and a broth-like nuance reminiscent of matsutake mushrooms. The aroma is complex, with fragrant components felt at the top of the glass, expressing a wonderful harmony. The attack on the palate is smooth and silky. You feel the sweetness of ripe fruit with a moist, soft touch, and the integrated tannins are delicate. These very fine tannins are what Hirakawa Winery thoroughly pursues. The alcohol sensation is moderate, balanced toward umami. A pleasant mouthfeel spreads. The finish has gentle acidity and a slight bitterness, leaving a lingering aftertaste that makes you want to keep experiencing the harmony between fruit and barrel.
