Using Muscat Bailey A contract-grown in Asahi Town, Yamagata Prefecture, cold maceration (fermentation at low temperature for a set period before fermentation) was performed to carefully brew the wine so as to maximize the fruit flavors.
This red wine was aged for 11 months in French wine barrels and then bottled, followed by over a year of bottle aging. It features the elegant aroma of Muscat Bailey A, flavors of red fruits such as raspberry and wild strawberry, barrel-derived spiciness, and finely textured tannins that linger pleasantly on the finish.
