This red wine combines Merlot grown in Iga City, Mie Prefecture by Marukyo Farm in Kawai Town, Nara Prefecture, with Kerner from Yoichi Town, Hokkaido.
Merlot is destemmed and crushed, then fermented at low temperature in a fiber tank. Pigeage is done by hand about twice a day, and pressing occurs while sugars remain. Afterward, anaerobic fermentation takes place in a stainless steel tank.
A somewhat wild aroma reminiscent of natural wines from southern France, likely due to anaerobic fermentation after pressing, with volatile acidity and red fruit scents. The acetic acid is balanced to provide a pleasant umami taste in the mouth.
A small blend of barrel-aged Kerner and stainless steel tank-aged Kerner, imagined as adding Viognier to Syrah.
It has a slight green note and is recommended to pair with sweetfish and similar dishes.
This wine also seems likely to create an exceptional pairing.
