The vineyard in Kamimaki Town, from which we sourced grapes in 2022 and 2023, was managed by our company in 2024. (It was returned in 2025, so it was not cultivated.)
The grapes were harvested early, with 60% juice extracted, and intended to be bottled as sparkling wine with secondary fermentation in the bottle, but due to volatile acidity, the sparkling process was abandoned and it was bottled as is.
Personally, I belong to the camp that finds volatile acidity bothersome in fully fermented sparkling wines, but acceptable in still wines.
Since it uses French oak barrels that have been used for two years, it has an aroma reminiscent of French natural wines, making it the first wine of this style I have ever made.
Natural wine lovers who try this wine might be a bit surprised.
