The Mondebrie grape is a Japan-original white wine variety created by crossing Chardonnay and Cayuga White. It undergoes long, low-temperature fermentation (2–13°C for 6 weeks), leaving a slight residual sugar. Just before bottling, it is deliberately coarsely filtered to preserve as much of the grape’s natural aroma and flavor as possible, resulting in a slightly dry white wine.
Features a floral aroma reminiscent of white peach and Earl Grey. The palate is mellow with a subtle sweetness of honey and fruit, and a gentle, clean acidity lingers on the finish. Recommended with tempura, fresh spring rolls, and gratin.
