In 2020, there was a lot of rain in May, and due to the occurrence of "bunch rot and fruit rot" (房べと、実べと), we dropped a considerable number of bad bunches at a relatively early stage, resulting in a significant limitation on yield and a concentration of flavor in the fruit.

"By delaying the harvest until late October, the sugar content increased, and to add further complexity, we included a small amount of second-crop berries that were set late on the trellis in the field, along with the natural acidity derived from the trees."

Stainless steel tank used. No added sulfur dioxide, wild yeast used.

Cultivation with reduced pesticide use in all fields. No chemical fertilizers or herbicides are used.
