Although the grape varieties and production methods differ each year, it is made from these three types of grapes, combining table grapes and wine grapes.
One of winemaker Meguro’s cherished wines, which he has continuously produced since 2017, Bianco is improved every year with upgraded production methods aiming for an even better version.
Since 2022, Delaware and Chardonnay have been produced using the same method as Tirol, familiar from the Neko series. During barrel aging, barrels that mature better among several are selected and blended as Bianco.
The fruitiness and crisp acidity from the Chardonnay, the rich body from the well-ripened Delaware, and the honey-like aroma and sweetness unique to the Blan de Noir style of Steuben. These three elements form the composition each year. Also, in 2023, some acacia barrels, which tend to bring out floral aromas, were used. This adds a bit more barrel nuance than usual Bianco, but it is balanced by fruitiness and complexity. It has resulted in a very harmonious and rich white wine.
