This wine is inspired by Rosato 2015, one of the first wines brewed by Hirotaka Meguro in 2015. "Bis" means "encore" in Italian. As the name suggests, this is a revival due to many encores from customers. The label is also based on the FAF series label from the first year. It is a rare wine with only three vintages produced so far: 2015, 2020, and 2023. It is impossible to make the same wine every year under different weather conditions, but it is also true that there is an interesting aspect in following nature each year and making wine accordingly. The wine is primarily based on table grapes like Rosario Bianco and Neo Muscat, but thanks to a fortunate connection, a small portion of lightly colored Cabernet Sauvignon was also obtained. This was direct-pressed and included as a blanc de noirs. The white wine made this way is then macerated for five days with the pomace from the top cuvée Rosso and Ohno field blend grapes from Ohno Farm in Takahata Town (a technique called Ripasso, used in northern Italy with Amarone pomace), adding depth and volume. We hope you enjoy this wine, which goes beyond a refreshing white wine to include various floral aromas and complexity.
