Fattoria AL FIORE / Rosso 2021 (Red) 750ml
Regular price ¥9,000/

Looking back now, the year 2021 was a big vintage in recent years.
The accumulated temperature was higher than usual throughout the year. Despite some autumn rain, the weather was calm and sunny from mid-September through October, allowing the grapes to be watched over with confidence.
In August, the vines are pruned and leaves around the clusters are removed; in September, the clusters are thinned appropriately when the sugar level reaches about 20 degrees. The grapes are then ripened for just over a month before being harvested in late October. At this point, from a harvest of about 2,500 kilograms, only the best grapes are carefully selected for Rosso. The total Merlot yield from Mr. Ohno’s plot, including cluster thinning, is 3,000 kilograms, and half of that, 1,500 kilograms, becomes Rosso.
This is a very precious and noble wine, made from only half of the vineyard.
The Merlot vines at Ohno Farm are about 20 years old. Over that time, nurtured with Mr. Ohno’s devoted care, the vines have matured into wonderful grapes thanks to the time invested and the favorable conditions of the land. Therefore, the winemaking is kept simple. Strict selection in the vineyard, all grapes with higher ripeness are destemmed, and during the one-month maceration period, only a few gentle punch-downs are done, with minimal daily care and observation. Afterward, the wine is gently pressed and transferred into two large barrels and one barrique for one year of aging before bottling.
This Merlot from Mr. Ohno holds a unique potential and many distinctive characteristics of the land. It features gentle tannins, a soft yet deep fruitiness, and no startling impact, but an endlessly long finish and acidity. It’s a very elegant wine that almost evokes Pinot Noir. Truly a flagship wine that lives up to its name, and among them, it was an outstanding vintage. Released after aging for just over three full years, it is a wine that will continue to evolve beautifully over the coming years.
