20% of the total was fermented in whole bunches, while the remainder underwent skin contact. It was aged in stainless steel tanks.
It has a green aroma derived from fennel, lemon, and grape stems; initially, it has a strong mineral character, but quickly transforms into a ripe citrus scent reminiscent of Hyuganatsu. It pairs excellently with raw seafood seasoned with salt and citrus. Japanese vinegared dishes are also recommended.
