Iwate Prefecture Yama Sauvignon × Campbell were both destemmed, crushed, and placed into an open tank. Surrounded by aroma and feeling the liquid temperature and fermentation stimulation, I wanted to be fully immersed, so I hand-plunged and played for 2 weeks, then pressed. To allow deeper penetration and longer presence in the mouth, it was aged in French oak. Bottled after 8 months when the edges began to soften. After about a year of careful resting in the cellar, it is now ready. The rich aroma of brown sugar plum wine with cinnamon and cumin spices. While the acidity firmly grips, the fruitiness resembles ripe Japanese plums. Cocoa-like depth releases the finish, repeating the delight of tension and relaxation.
