In 2024, we carefully harvested at the perfect timing, seeking optimal grape ripeness.
The color transitions from rooibos red, hinting at umami, to garnet. Charming fruity notes of sweet and sour berries are layered with aromas of fermented teas like black tea and cinnamon.
It has a pleasant acidity reminiscent of plum candy, along with a subtle Japanese sweetness similar to rakugan sweets.
This is a bottle that pairs wonderfully not only with Western cuisine but also with Japanese ingredients like lightly seared herring skin.
