The vineyard is located in Iwatarihara, Shiojiri City, in the southwestern part of the Matsumoto Plain in Shinshu, surrounded by mountains around 3000 meters high. It sits on a complex alluvial fan formed by the Azusa River flowing from the Hotaka mountain range, at an elevation of 700 meters. The soil consists of 20 centimeters of black volcanic ash on the surface, with clay underneath.
Fermented slowly at low temperature for about one month in a stainless steel tank. This wine features gentle fruit flavors of ripe apples and apricots, accented by honey and a subtle bitterness.
