The wine used is 100% Cabernet Sauvignon from contracted vineyards. After fermentation and aging in stainless steel tanks, secondary fermentation in the bottle was carried out.
A light degorgement has been performed, resulting in a clear finish with no sediment. It has a solid effervescence at 3.5 atmospheres.
The mild acidity of Niigata grapes does not allow for the production of crisp wines like Champagne.
Instead of forcing acidification or extremely early harvesting, we recognized gentle acidity as one of the characteristics and expressed the uniqueness of Niigata. The top notes evoke a hard texture reminiscent of white stones, along with the aromas of white peach and apple.
When you take it in your mouth, a soft foam and thick liquid spread. Cabernet Sauvignon is originally a variety for red wine, but I think it's the greatness of the variety that allows for such delicious results even when made into Blanc de Noirs.
By the way, I intended to create the flavor of the musasabi based on "the taste imagined from the label's illustration" in my own way. I would be happy if you could enjoy it while comparing it to the image of the illustration.
