Using Chardonnay grown in our own vineyard in the Kano district of Tōmi City, Nagano Prefecture.
Whole cluster pressing, primary fermentation with wild yeast in barrels. Bottled unfiltered after one year of barrel aging.
Released after six months of bottle aging in the cellar room.
Citrus, early spring small flowers, pleasant acidity, and a calm, long finish.
