2021 was marked by an early spring, a summer with consecutive midsummer days, a cool period during Obon, and a calm, fine autumn.
In Chardonnay, a high level of ripeness was widely observed throughout the village. As we toured the vineyards weekly to decide the harvest date and tasted the grapes, we were surprised and delighted to find that in many vineyards, the grapes were more fully ripe down to the seeds than usual, filling us with excitement and anticipation. The wine made from grapes that matured well while maintaining acidity, thanks to cool mornings and evenings and daytime sunshine, offers a rich flavor with concentrated fruit notes of apple and lemon and acidity that tightens the palate.
