Mr. Akiba's Chardonnay from Kaminoyama City, which forms the backbone of the wine, was harvested over several days considering ripeness.
After direct pressing, barrel aging.
Mr. Kazama's Steuben from Nanyo City is Brand Noir.
Mr. Iwase's Delaware from Kaminoyama City is not fully ripe Delaware; it is harvested just before full ripeness.
The wine's taste was enhanced by combining both refreshing acidity and a firm mouthfeel.
We also took care to handle each grape variety carefully during the preparation.
All of these were assembled in the best blend to complement each other the day before bottling and then bottled.
