During the COVID period, we were timing the extraction of wine from the barrels and bottling, but with each tasting, we felt it would become even more delicious, and before we knew it, 3 years and 7 months had passed.
On October 8, 2019, Etsuro Abiko, a grape producer in Sagae City, Yamagata Prefecture, carefully harvested Chardonnay grapes. Fermented and aged in French oak barrels. After an aging period of about 3 years and 7 months, it was bottled in May 2023. It has a strong woody aroma from the barrel aging, along with sweet and fragrant scents of vanilla, butter, walnuts, and coconut. The aftertaste is a rich and full-bodied dry wine with refreshing citrus fruit aromas, honey scents, and a toasty fragrance.
