Among the Cat series, Sola is familiar as a charming sparkling Delaware.
Sola, which is usually released from early spring to early summer every year, unfortunately could not be released this year. The reason is that in 2023, due to the very hot weather, the ripeness of Delaware increased too much, causing the acidity to drop too low to be made as a sparkling wine.
However, while always brewing with barrel fermentation as usual, I noticed an incredibly high potential somewhere. As expected, after aging in barrels for a full year, it evolved remarkably, and now, we need to reconsider the concept of Delaware going forward. This flavor has turned into a beautiful wine with potential so great that it is unrecognizable as Delaware at first glance.
