When the winery was established in 2018, we received support through crowdfunding, and the vines bore fruit successfully. At the local Ueno (Wano) vineyard, we cultivate eight grape varieties—Berry A, Merlot, Bijou Noir, Pinot Noir, Syrah, Albariño, Chardonnay, and Mondebrie—using pesticide-free trellis training.
Pesticide-free cultivation of wine grape varieties (no chemical pesticides, Bordeaux mixture, or sulfur compounds used) is quite challenging, but we were able to harvest again in 2023. Although we cannot produce single-varietal wines, we decided to ferment all varieties together at low temperature to "taste the vineyard." Slowly and carefully expressing the "vineyard." After bottling, the balance between red and white wine components was not yet harmonious, but it has finally become a "soft" flavor that expresses the "vineyard."
