Made from 100% Delaware grapes cultivated without pesticide spraying (no Bordeaux mixture or sulfur compounds) in the Kanayama field in Nanyo City, characterized by thick grape skins.
This Delaware grape was grown in spring with plastic covering, allowing the wind of Nanyo City to pass through sufficiently. The crushed grapes and whole clusters were alternately stacked in the tank, sealed tightly at the top with plastic, and underwent 40 days of carbonic maceration (MC). It was naturally fermented without any intervention, then pressed, and after the final fermentation, underwent secondary fermentation in the bottle.
With an alcohol content of 12%, you can enjoy a solid "lightly sparkling wine" where the bitter citrus sensation bursts through the bubbles.
