The wine is bottled during fermentation and continues fermenting inside the bottle, allowing the carbon dioxide produced by the yeast to dissolve into the wine, creating a sparkling wine. Because it is unfiltered, grape-derived cloudiness and sediment remain, which produce an exceptional flavor.
