This is a pétillant orange wine made using seeded Delaware grapes from the Honzawa Akahage area in Yamagata City, Yamagata Prefecture, with fermentation on the lees followed by bottle fermentation. The characteristic floral sweet aroma of Delaware grapes harmonizes with a refreshing acidity, and the subtle astringency from lees fermentation creates a pleasant dry pétillant. The year 2023 was very hot with little rain, allowing the harvest of grapes with high sugar content. As in previous years, the grapes were harvested early to retain acidity, resulting in a wine characterized by clean acidity and rich fruitiness. We recommend starting by tasting the clear supernatant part and gradually mixing in the lees as you drink. The flavor changes depending on the amount of lees mixed in.
