It undergoes lactic acid fermentation and secondary fermentation in the bottle (Champagne method), and by intentionally leaving the lees, it is finished as a cloudy type sparkling wine with a pleasant texture and an approachable taste.
① Base wine
Fermented using early-harvested Koshu grapes.
Features refreshing Japanese citrus aromas and crispy acidity.
② Supplementary blended wine
Fermented using late-ripened Koshu grapes.
Features aromas like apple honey and a pleasant bitterness.
Aged for 6 months in the sur latte (horizontal) position. No disgorgement. 3 atmospheres.
