This is a sparkling wine made by Yokomachi Père et fils in Miyoshi City, Hiroshima Prefecture, using Sauvignon Blanc, with secondary fermentation in the bottle. After destemming and crushing, the juice was pressed and underwent primary fermentation at low temperature, then bottled for secondary fermentation and aged in the bottle for 15 months. It underwent riddling (to settle the lees), disgorging (to remove the lees), and dosage (addition of liqueur). No sugar was added in the dosage, resulting in an extra brut finish.
Herbal aroma typical of Sauvignon Blanc, refreshing grapefruit-like notes, and the fruity flavor of grapes characteristic of the fortunate 2020 vintage.
