We blended Delaware and Alicante A from our own vineyard and finished it as a rosé sparkling wine using the rural method (Méthode Rurale). We layered it over the reddish feathers of a thrush. The bubbles are relatively gentle, but since it contains some sediment, please chill well and let it settle before opening.
A bright orange-tinged coral pink hue. The first attack has a slight sweetness, but at the same time, you can feel the beautiful acidity characteristic of Yamagata. It has a richness unique to our own vineyard and a moderate finish that lingers. Since no SO2 is added, please be sure to store it in the refrigerator.
