This is Steuben from Toshinobu Kazama, a grape farmer in Nanyo City, Yamagata Prefecture.
Kazama-san has lovingly nurtured and protected Steuben grapes every year as a grape farmer for many years.
We decided to make a wine that expresses Kazama-san's personality, loved by everyone, and brewed it with heartfelt care.
The label features an illustration based on photos taken of the Kazama family during harvest.
The preparation method was kept simple without doing anything complicated.
We destemmed fully ripe Steuben grapes, performed a short maceration to retain pure fruit flavors, gently pressed them, then transferred the juice to a stainless steel tank, racked it, and slowly moved the yeast.
Then, we carefully determined the final fermentation stage and bottled it (primary fermentation in the bottle).
When first opened, the gentle gas pressure releases the characteristic cherry-like fruitiness of Steuben, which gradually changes over time to a gentle acerola and plum-like flavor.
The gentle and penetrating flavor that is kind to the body can still be enjoyed as a rosé wine even after the gas pressure has dissipated.
