When the winery was established in 2018, we received support through crowdfunding and the grapes bore fruit safely. At the local Ueno (Wano) vineyard, eight grape varieties—"Bailey A, Merlo, Bijou Noir, Pinot Noir, Syrah, Albarino, Chardonnay, Mondobrillier"—are cultivated with pesticide-free trellis training.
Pesticide-free cultivation of wine grape varieties is quite harsh, but we were finally able to harvest in 2022. Although we cannot process single varieties, we decided to ferment everything together at low temperature to "taste the vineyard." Slowly and slowly, to express the "vineyard."
After bottling, the balance between red wine and white wine was not harmonized, but it has finally become a "soft" taste that can express the "vineyard."
As a spicy and mellow umami wine.
