Regular Price ¥4,950Made using Pinot Noir vines over 20 years old from our own farm, aiming for a gentle flavor that seeps into the body.
2023 was an excellent year for early-ripening red varieties, with no rain from late July to mid-September. The grapes were darker than ever before and in perfect condition with almost no disease.
On the other hand, it was a year with low acidity due to warm nights. To compensate, lactic acid bacteria were lightly activated before fermentation to add lingering acidity and a subtle flavor.
From the glass overflow aromas of raspberry, violet, leaf mold, and tanned leather,
the distinctive floral scent of sandy soil.
On the palate, it is full-bodied, soft, and has a gradually spreading umami.
Still young, but it shows many promising elements for the future.
Immediately after opening, it has a slightly reductive character with iron and gunpowder notes, giving a firm impression, but this is rather a good accent for this wine.
It softens and becomes smooth over time, so we hope you enjoy it slowly.
